The Hasselback preparation comes originally from Stockholm from the popular Swedish potato. The potato is cut into a fan shape and baked crispy in the oven. As I know, I am a huge fan of zucchini, so I had to try out the idea with my favorite green vegetables. The recipe was really delicious! I do not want to deny it to you.

The recipe for my Hasselback zucchini is super fast and easy to prepare! Quick and, above all, easy are the most important properties that a recipe must have for me. Because after a hard day with a lively toddler I would like to cuddle in the evening only with a tea on the couch. When it gets dark outside so early, doing nothing is not hard at all. Children and non-working evenings are just too precious to work long in the kitchen, so I like the simple and delicious recipe.

I filled the zucchini with a mixture of Gruyère, Chester and Mozzarella, which melted beautifully in the oven. The topping for the zucchini fan is also sour cream with spring onions and fried bacon cubes. I am so happy that I discovered this low carb dish for myself. I am sure I will soon approach more creative fillings. For example, I can imagine feta and spinach really well.Bake for 20 minutes.

  • In the meantime, heat the canola oil in a pan and the bacon cubes sauté.
